  • 10 eggs (just the yolk)
  • 1 packet of vanilla-flavored sugar
  • 1 vanilla pod
  • 250 grams cane or granulated sugar
  • 250 ml brandy (you can also use jenever)
  • Cuticles and whipped cream (for garnish)

Separates the yolk from the egg white. Put the egg yolk in an (iron) bowl that you can use to heat the whole in a bain-marie later.

Store the egg whites in a grease-free bowl. You can later make meringues with this to top off the eggnog (instead of whipped cream).

Cut open the vanilla pod and remove the vanilla. Add it to the egg yolk. Add the cane sugar and vanilla sugar and mix well with a whisk.

Place a pan with a layer of water on the stove and place the bowl with the mixture on top. Add the brandy while stirring. Keep beating well with a whisk until it becomes thick. Note: the mixture should not boil (otherwise it will curdle). You can keep an eye on how hot the eggnog is with a cooking thermometer. It should not exceed 85 °C.

When the eggnog has the desired thickness (a bit the thickness of custard), remove the bowl from the heat source and place it in a bowl of cold water. Continue to stir the eggnog for another 3 to 5 minutes to allow the mixture to cool.

Pour the cooled eggnog into a jar or bottle and refrigerate until use. Serve in a lawyer glass or other nice (small) glass. Pipe a dollop of whipped cream on top and stick a goat leg in it.
