  • 120 grams semi-skimmed cottage cheese

  • 2 passion fruits
  • 1 mango
  • 1 Atsina cress

1. Preheat the oven to 180 degrees and grease the muffin tin with cooking spray or oil.

2. Mix the granola in a bowl with the honey and a mashed banana. Divide the mixture between 6 muffin tins.

3. Press the mixture down well and push the sides up slightly to form small cups.

4. Bake the cups for 15 minutes until they are golden brown and crispy. After baking, carefully remove them from the molds and let them cool on a rack.

5. Fill the cooled nests with the yogurt and top with a teaspoon of lemon curd. Divide finely chopped mango pieces and the passion fruit seeds over this. Garnish with the Atsina cress.
