  • 3 green asparagus

  • Fresh arugula
  • ½ lemon
  • 20 grams of Parmigiano Reggiano
  • 1 sourdough baguette
  • 60 grams of butter
  • Salty
  • Black pepper

This is how you make these baked asparagus

Preheat the oven to 180 degrees.

Cut the woody bottom part of the asparagus, and peel the white ones with a vegetable peeler.

Melt the butter in a pan over medium heat and let it brown briefly. Then add the asparagus. The best is when they still have a bite, so fry them for about three minutes on each side.

Bake the baguette in the preheated oven until golden brown.

Now turn off the heat under the asparagus and add the arugula pesto, let it heat up briefly. Add lemon juice, pepper and salt to taste

Place the asparagus on a nice deep plate and pour the pesto sauce over it generously.

Garnish with arugula and curl the Parmigiano with a vegetable peeler.

Serve with a warm piece of bread (and dip it in the sauce too…)
