Spinach with pine nuts and raisins

Must Try

This tasty side dish of spinach with pine nuts and raisins is a Nigella Lawson classic . We give it a little Middle Eastern Ottolenghi twist by first stewing the onions briefly with some cumin.

For 6 to 8 people:

  • 50 grams sultanas
  • 1 onion
  • 1/4 teaspoon cumin
  • 2 tablespoons olive oil
  • 50 grams of pine nuts
  • 1 kilo spinach
  • 2 tablespoons white wine

We love spinach. With this recipe you prepare it just a little differently than usual. The raisins give a sweetness, the pine nuts provide crunch and the onions are a delicious seasoning.

Serve this spinach with pine nuts and raisins as a side dish with couscous , a piece of meat or a table full of mezzes .

Spinach with pine nuts and raisins

Toast the pine nuts in a dry frying pan until golden brown.

Cut the onion into thin rings. In the frying pan over low heat, sauté them very slowly in olive oil until they are completely soft and golden. You really have to give this some time: about ten minutes. It will be worth it. Then add the cumin and let it fry briefly.

Wash the spinach and add it in stages to the onions in the pan. Stir well so that it can shrink.

Sprinkle the pine nuts and raisins over the spinach, stir and you’re done.
