This dish is ideal for weekdays, because it is ready quickly. Especially if you already have pickled cucumber and radish in your fridge. But you can also make them very quickly by putting them aside in a sealed container with a teaspoon of salt, three teaspoons of sugar and a teaspoon of rice vinegar until use. Or use them raw.
Scandinavian poké bowl with gravad lax
If necessary, first prepare the pickled cucumber and radishes (see above).
Cook the rice according to the directions on the package. Do the same with the potatoes.
Mix all ingredients for the sauce together and set aside.
Time to finish the bowls: start with the rice and divide the cooked beetroot, pickled cucumber, radishes and potatoes over the bowl. Place the gravad lax next to it and scoop a large scoop of the crème frache into the center of the bowl.
Place a spoonful of pickled mustard seeds on top, divide the pickled red onion over it and sprinkle with the dill. Finally, grate plenty of fresh horseradish over the Scandinavian rice bowl and attack.
