- 4 grams of kaffir lime leaves (e.g. from the freezer of the toko)
- 3 large cinnamon sticks, crushed in a mortar
- 2 teaspoons coriander seeds
- 1/4 teaspoon ground nutmeg
- 1 teaspoon gum arabic (optional)
- 900 grams granulated sugar (adjust to taste)
- 3.5 grams of citric acid (optional)
- Carbonated Water (Spa Red)
- ice cubes
Make no mistake: this is not a healthy recipe , because there is quite a bit of sugar in this homemade Coke. So enjoying in moderation is the motto. And the nice thing about this recipe is that you can adjust the amount of sugar to your own taste. Would you like the cola a little less sweet? Then experiment with the amounts.
How do you make Coke?
In this recipe we use gum arabic (a vegetable binding agent): you can order it online, for example at Pit-Pit.com . You can also omit it: the agent is only added for mouthfeel. Without gum arabic, your cola will be slightly thinner.
You can also order the citric acid online at Pit-Pit, but you can also omit that. In our opinion, it just adds an extra sour kick, as you also know from sour candies.
It is worth mentioning that homemade cola does not have the dark brown color of normal cola: it rather has a very light color. If you still want that brown color, add a drop of brown food coloring or – like the Americans – a little ‘browning sauce’ from the Kitchen Bouquet brand (for sale online). Make your own Coke
Prepare a large (sauce) pan. Mix the water with the grated zest of the lemon, lime and orange. Also add the cinnamon, along with the Kaffir lime leaves, coriander seeds and nutmeg. Mix in the gum arabic (optional) with a whisk until it dissolves.
Raise the heat to high and add the sugar. Stir until the sugar has dissolved and let it boil for about a minute. Then remove the pan from the heat.
Mix the citric acid with the juice of half a lime and stir it into the cola syrup with a whisk. Allow the mixture to cool completely, then strain it and transfer it into a sterile liter bottle. It is also best to first pour it through a cheesecloth or a piece of kitchen paper to filter all loose particles (for example from the cinnamon) from your cola.
The cola syrup will keep for two weeks in the refrigerator.
