For 16 green pancakes:

  • 80 ml milk (almond milk, rice milk, soy milk, or cow’s milk)
  • 250 grams raw zucchini, peeled if not organic and roughly chopped

  • 3 tablespoons maple or agave syrup (or honey)
  • pinch of salt
  • 1 heaping teaspoon cinnamon
  • 180 grams of buckwheat flour (natural store)
  • 3 teaspoons baking powder
  • Olive oil or butter

Puree the zucchini with the milk, eggs, salt, syrup and cinnamon until smooth. Then add the flour and baking powder and stir together.

Heat olive oil or butter and scoop four heaps of batter into the pan. Fry the pancakes on both sides for a few minutes until golden brown.

Delicious with maple syrup, honey and cinnamon or with apple syrup.
