Turkish köfte: this is how you make it at home!

Must Try

Adelicious Turkish recipe for köfte. This recipe comes from the nice site Turkskok.nl .

Ingredients

For 6 people:

For the dough:

  • 1 cup  thin  bulgur
  • 3 potatoes
  • 2 teaspoons red pepper
  • 2 teaspoons black pepper
  • 2 teaspoons salt
  • half cup of water
  • half cup of flour

For the filling:

  • Half cup (broken) walnut
  • 150 grams of minced meat
  • Half a bunch of parsley
  • 2 teaspoons red pepper
  • 2 teaspoons black pepper
  • 2 teaspoons salt

Additional:

  • Half a liter of sunflower oil (for frying the köftes)

Preparation of the dough:

Let the potatoes boil in a pan. Meanwhile, add the bulgur and half a cup of water in a bowl. Knead the whole thing for 5 minutes. Then add the red and black pepper, as well as the salt.

Remove the potatoes from the pan, peel and add them to the bowl in chunks. Knead again for 5 minutes. This time add the flour. Knead the whole again for a few minutes, at least until it no longer sticks to your hands, if that does happen, add some more flour.

Preparation of the minced meat:

Put the mincemeat in a saucepan, let the mincemeat cook in a saucepan for 5 minutes, at least until the moisture from the mincemeat has boiled. Then add the walnuts, chopped parsley, red and green pepper and salt to the saucepan. Stir everything and set the fire to a low setting.

Preparation of the kofte:

Take a piece of the dough in your hand and shape it into a tube shape with your fingers. Do this carefully as the dough will crumble quickly. Then fill it with minced meat, then close the cup with some dough.

Another thing you can do (this is easier) is to slightly flatten a piece of dough into a round shape and fill it with minced meat. Also close this mold with dough. Make these molds until the dough and minced meat is used up.

Meanwhile, put a pan with sunflower oil on the fire, wait until the sunflower oil is hot. Place the köftes in this and let the köftes bake for about 5 to 10 minutes, at least until they are golden brown. Make sure to turn the köftes at least once in the pan!
