Tortilla with Azuki beans

Must Try

This special tortilla with Azuki beans comes from the delicious site Beginspiration .

For 1 person, or as a side dish for 2:

  • 2-3 tortillas
  • ½ can of Azuki/black beans, canned
  • Handful of coriander, finely chopped
  • 2 hands (young) mature cheese, grated
  • 1 tomato, diced
  • 1 spring onion, finely chopped
  • Number of drops of Tabasco
  • Pepper and salt

Drain the black (or Azuki) beans, wash them under the tap and let them drain briefly. Then put them in a bowl, add the chopped tomato, coriander and spring onion. I like spicy, so add a lot of Tabasco, but do this to your own taste. You can also add some salt and pepper. Stir well!

Now place a torilla on a board, sprinkle one half with cheese (keep about 1 cm from the edge) and spoon some of the bean mixture on top. Add a little more cheese on top and fold the tortilla in half. Press well and then it can be baked in the (grill) pan for about 2 minutes on each side. Enjoy!

ps. Yes, of course this is best with a quick and creamy quacamole. Maarja, I forgot that when I was in the supermarket.. How do you make it? Avocado in cubes, finely chopped coriander, lime juice, red pepper (finely chopped), salt/pepper and mash/mash with a fork! 5 minutes of work, and delicious to have on the side!
