Quick couscous salad with cauliflower

Must Try

Reader Michelle gave us this fun recipe for a quick couscous salad.

  • 1 cauliflower
  • 2 handfuls of raisins
  • 100 grams pine nuts
  • 1 cup of bacon
  • 15 grams coriander
  • 15 grams of mint
  • 15 grams of parsley
  • 3 teaspoons paprika powder
  • Olive oil
  • Salt and pepper

Cut the cauliflower into florets and grind them in a food processor to couscous size. Bake this for about 4 minutes in a dry pan and then put it in a cold dish. When left in the pan, it cooks through and becomes very soft.

Mix the still warm cauliflower couscous with the paprika and raisins. Fry the bacon until done and drain well on kitchen paper. In addition, brown the pine nuts in a dry pan.

Finely chop the herbs and mix with the already cooled couscous, bacon and pine nuts. Season with olive oil, salt and pepper.

This salad is delicious lukewarm and cold, and easy to take to work!
