- 1 to 2 tablespoons olive oil
- 1 onion finely chopped
- 2 zucchini (regular size)
- 1 broccoli
- 1 vegetable stock cube
- 3 tablespoons finely chopped parsley
- 1/2 tablespoon coarse mustard
- Pepper and salt
Put the oil in a pan and fry the onion in it. Cut the broccoli into florets and the courgettes into 2-cm cubes. Add to the onion and let it simmer for four to five minutes. Add one and a half liters of water along with the vegetable stock cube. Bring to the boil and cook for 15 minutes until the broccoli is tender.
Mix the soup thoroughly. Add the chopped parsley and mustard and stir well. Season with salt and pepper.
