  • 200 grams smoked chicken breast
  • 1 ripe mango
  • 1 ball buffalo mozzarella
  • 150 grams spelled pasta
  • 1 handful of pine nuts
  • 1 handful almond shavings
  • Arugula or lamb’s lettuce

Raspberry dressing:

  • 4 tablespoons raspberry vinegar
  • 2 tablespoons olive oil
  • Lemon juice
  • 1 tablespoon honey
  • 1 tablespoon mustard
  • Salt and pepper

Place a pan with water and a pinch of salt. Once the water is boiling, add the spelled pasta and cook for about five to eight minutes until the pasta is al dente. Let the pasta cool under the cold tap.

Meanwhile, cut the smoked chicken breast into diagonal slices, and the mozzarella and mango into pieces. Fry the pine nuts and almond shavings together in the pan until well browned. When the pasta has cooled, mix it with all the ingredients.

Using a whisk or wooden ladle, mix two tablespoons of lemon juice with the vinegar, honey and mustard. Then add the olive oil while stirring. Taste and season with salt and pepper. Taste again and add lemon juice if desired.
