Meal salad with chicken, bacon and goat cheese

For 2 people:

  • 1 small head of lettuce
  • 2 young soft goat cheeses with honey
  • 10 slices bacon
  • 3 tomatoes
  • 1 smoked chicken breast
  • 1 soft-boiled egg
  • Handful of pine nuts
  • 2 frozen sandwiches
  • Herbs (e.g. Provencal herbs)
  • Olive oil
  • 2 thick garlic cloves
  • Couple of basil leaves
  • Little grated cheese

For the dressing

  • 1 soft-boiled egg
  • 2 teaspoons mayonnaise
  • 4 teaspoons Turkish yogurt
  • A few drops of Worcestershire sauce
  • Pepper & salt to taste
  • 1 teaspoon coarse mustard
  • 1 tablespoon lime juice
  • Herbs to taste (e.g. Provencal herbs)
  • Splash of olive oil
  • Little paprika powder

Making a meal salad with chicken, bacon and goat cheese

Wrap the goat cheese with two slices of bacon and make a mixture of the olive oil, herbs and one clove of finely chopped or pressed garlic. (Actually I always have a jar of this mixture, the longer it stands the better, great for the bbq or whatever.) Brush the packets with the mixture.

Rub the two frozen slices of bread with the other clove of garlic until the garlic clove is used up. Cut into coarse cubes immediately, this is very easy when the sandwich is frozen.

Put these cubes in an oven dish and throw a few spoons of the oil mixture over it. Mix well. You bake the bread cubes in the oven at 220 degrees to delicious crispy croutons . And you also put goat cheese in an oven dish in the oven and bake it until it is nicely browned.

Wash and dry the lettuce and tear into pieces. Divide this between two plates. Also cut the tomatoes and smoked chicken breast into pieces, divide this over the lettuce. Toast the pine nuts and fry the remaining bacon slices until crispy.

Mash the soft-boiled egg in a bowl and add all the ingredients for the dressing. Taste and season additionally if necessary.

When the goat’s cheese and croutons are ready, divide the dressing over the plates, then the goat’s cheese, croutons and top with half a soft-boiled egg. Crumble the bacon slices over the plate along with the grated cheese, pine nuts and finely chopped basil.
