Make your own calamari

In Spain you can get them on every street corner, nice and juicy and tender with a little lemon juice or aioli. After much research, Felicity Cloake from The Guardian  created the perfect recipe for calamari (one of our favorite tapas ), bake it!


Appetizer for 4 persons

  • 400 grams cleaned squid
  • Milk
  • 4 tablespoons corn flour
  • 4 tablespoons of flour
  • 1 teaspoon salt
  • Sunflower oil for frying
  • Freshly ground salt, to serve
  • Pieces of lemon or aioli

Make your own calamari

Cut the tentacles off the squid and cut the center piece into thick rings about one centimeter wide. The top of the squid should have the shape of a triangle, make small slits in the shape of a diamond with a sharp knife.

Put all the pieces together in a bowl and cover with a little bit of milk. Freeze the whole thing for about eight hours, if you’re short on time: even if it’s just half an hour, anything is better than nothing.

Mix the cornmeal and flour together with the teaspoon of salt in a bowl. Fill a large, heavy-bottomed pan one-third full with oil and heat. If the oil starts to sizzle when you throw in a piece of bread or salt, you know for sure it’s hot enough.

Drain the squid from the freezer and pat dry. Cover with the flour mixture and shake off any excess flour. Fry in several batches for about a minute, until they are crispy and golden.

Drain on kitchen paper, sprinkle with a little salt and serve as soon as possible, delicious with fresh lemon or aioli !
