Adelicious fig salad from Jamie, via Caroline Brouwer ‘s blog .
For 1 salad
- 4 figs
- bag of arugula
- ball of buffalo mozzarella
- Parma ham, about 100 g
- 2 tbsp lemon juice
- 4 tbsp olive oil
- 1 tbsp honey
- salt pepper
This is how you make the fig salad
Divide the arugula among 4 plates. Cut the figs crosswise, but not all the way to the bottom.
Then, with your thumb and forefinger, pinch the bottom of the fig up to expose the inside. Place the figs on the arugula. You can wrap a slice of ham around each fig, but you can also roll up the ham slightly and form small florets. Tear the mozzarella into pieces and divide among the plates.
Sprinkle some basil leaves over the salad. Meanwhile, make the dressing and divide the honey-lemon dressing over the salad, making sure that some of the dressing also ends up in the fig. Serve with some French bread to mop up the dressing.
