For 4 persons:

  • 50 grams of butter
  • 1 onion, chopped
  • 50 grams of flour
  • 350 ml stock
  • 250 ml whipped cream
  • 1 potato floury, peeled
  • 500 grams spinach

Heat the butter in a soup pot. Fry the onion for 5 minutes. Add the flour and fry for another 5 minutes or until the mixture starts to colour. Add the stock, 500 ml water and the whipped cream. Cut the potato into small cubes and add. Bring to the boil and let it cook for 10 minutes on low heat.

Remove the pan from the heat. Add the spinach to the soup. Let it shrink for 1 minute and puree with a stick blender until smooth. Divide the soup among 4 bowls or plates. Serve with croutons if desired.
