Broccoli-garlic soup

For 4 persons:

  • 1 head of broccoli
  • 4 potatoes
  • 1 onion
  • 4 cloves of garlic
  • 0.5 – 1 liter stock
  • 1 hand fresh basil
  • olive oil
  • salt pepper

Cut the broccoli into small pieces (use the stalks as well). Peel the potatoes and cut into small pieces.
Clean the garlic and cut into pieces. Chop the onion and roughly chop.

Fry the onion and garlic in the olive oil until translucent and add the broccoli and potatoes. Fry for a while and cover with water. Add the stock and basil and cook until the vegetables are soft enough to mash.

Puree with a stick blender until smooth and season with salt and pepper.
