For 2 people:

  • 4 sandwiches (toasted if desired)
  • 1 avocado, peeled and sliced
  • handful of lamb’s lettuce
  • handful of pecans
  • 2 large tomatoes, sliced
  • half a red onion, cut into rings
  • 4 eggs
  • 2 tablespoons mayonnaise
  • pepper and salt

This is how you make the vegetarian club sandwich

First make the egg salad. Boil the eggs hard for 5 minutes, shock and peel the eggs. Cut into slices or cubes with an egg slicer or mash with a fork. Place in a bowl and sprinkle with salt and pepper.
