Vegan pesto with watercress and walnuts

Classic pesto is delicious, but a variant isn’t that bad either. For example, on Buzzfeed we found a delicious recipe with only five ingredients, including walnuts. 

  • 110 grams of walnuts
  • 2 cloves of garlic
  • 1 handful of watercress
  • 1 handful of fresh mint
  • 120 ml olive oil
  • Salt pepper

The original recipe uses pea sprouts, but because they are not always and everywhere to be found, we adapted this by replacing it with watercress.

Put the walnuts together with the garlic in a food processor and let it run until everything is finely ground. Then add the watercress and mint, and grind this briefly as well. Then season with salt and pepper and run the machine again. Slowly add the olive oil. Et voila! A delicious vegan pesto.

This pesto tastes good with various dishes, such as on toast with avocado and  poached eggs  or together with yogurt as a dip for your crudités. Or how about pasta pesto, but different? 

Aren’t you going to use the pesto right away? Then you can store it in a jar with a layer of olive oil on top. This will keep it good for at least a week.
