It’s on almost every card and is a real friend to everyone: the BLT, a sandwich with bacon, lettuce and tomato. Culy already has a number of variants (with scallops or wraps ), but we didn’t have the recipe for a classic BLT yet. Until now. The best thing about this recipe? This BLT is made with fresh mayonnaise, and believe us: that makes all the difference.
For 2 people:
- 3 egg yolks
- 1 tablespoon Dijon mustard
- 2 tablespoons white wine vinegar
- pinch of sugar
- Lemon juice
- Salt pepper
- 6 slices bacon
- 4 sandwiches
- 2 ripe vine tomatoes
- Lettuce leaves
Make the mayonnaise by beating the egg yolks with the mustard, sugar and vinegar with a whisk. Then add the oil in a thin, steady stream while beating. This will make the mayonnaise thicker. Continue beating for five to seven minutes until it is nice and thick and resembles “real” mayo.
No time to do it by hand? Then use a (stick) blender, be careful not to mix too quickly. Check that the mayo is well seasoned, and add a little lemon juice, salt and pepper if needed.
Toast the bread, meanwhile fry the bacon until crispy and cut the tomato into slices. Cover the bread with a layer of mayo, bacon, lettuce and tomato and top with salt, pepper and a slice of bread.
