These sweet potato latkes from the Forest Feast cookbook are rich in flavor, super crunchy and made in no time.

For 4 persons:

  • 2 sweet potatoes (unpeeled)
  • 4 beaten eggs
  • 1 minced garlic clove
  • 1 tablespoon breadcrumbs
  • Salt pepper
  • Olive oil
  • Greek yoghurt
  • Spring onion, in rings

In any case, we are huge fans of this book, made by Forest Feast blogger and photographer Erin Gleeson. It is a beautiful book with beautiful photography and illustrations by the author herself. All recipes are super simple and explained step by step in a spontaneous way. And all delicious vegetarian!

Grate 2 sweet potatoes (I don’t peel them). Mix with 4 beaten eggs, 1 minced garlic clove, 1 tablespoon breadcrumbs and salt & pepper.

Fry 3 heaps of 3 tablespoons mixture at a time in generous olive oil until golden brown, about 3 minutes on each side over medium heat. Scoop them out & drain on kitchen paper.

Serve with a dollop of Greek yogurt & sprinkle with spring onion rings.

*Editor’s Note: We tested this recipe and found that baking 3 minutes per side is really too short. Think about 6 to 8 minutes per side (depending on the thickness of your latkes of course).
