For 2 people:

  • 1 cup quinoa
  • 1 zucchini
  • 1 ripe mango
  • 1 onion
  • 1 tablespoon red curry paste
  • 2 tablespoons olive oil

Rinse the quinoa in a sieve. Place the quinoa in a saucepan (1 cup, which is about 185 grams) and add two parts (2 cups) of water. Bring to the boil and let it simmer for 10 minutes.
