Asummery recipe by Lies from the cool blog LepeltjeLiefde : an omelette with coriander, avocado and tomato.
For 1 large omelette:
- 2 eggs
- 1 tablespoon of water
- 2 tablespoons fresh coarsely chopped coriander
- Salt and freshly ground pepper (or chili flakes)
- Oil or butter for frying
- tomato slices
- Half avocado, sliced
- A few more coriander leaves
- Optional: thinly sliced spring onions
Beat the eggs with the water and salt & pepper. Until the mixture becomes slightly frothy. And stir in the coarsely chopped coriander.
Heat oil in a large frying pan and spread it all over the pan. Pour the omelette mixture into the hot pan and let it set over low heat (make sure the omelette doesn’t color as much as possible). Cover the pan with a large lid and check occasionally to see if the omelet is ready. This takes about 5 minutes on very low heat.
Do you not have a large lid or does the top not solidify? Then slide the omelette out of the pan onto a large plate. So that you can ‘bake’ the other side for a while.
Transfer the fried omelette to a large plate. And cover one half with slices of avocado, tomato and possibly spring onion. Season with salt and pepper. Finally, close the omelet until you can still see the filling. And enjoy it!
