Salad with goat cheese in filo dough

Mmm…! Lisette from Happy Little Kitchen made this fine salad, which especially tastes like a party because of the goat cheese in crispy filo dough. 

For 2 people:

  • 4 long strips of filo dough of about 10 x 40 cm
  • 4 tablespoons soft goat cheese
  • 2 teaspoons honey
  • 2 handfuls of mixed lettuce
  • 1/4 avocado, sliced
  • 8 cherry tomatoes, halved
  • 1 tablespoon butter
  • Dressing of your choice (for example, based on raspberry vinegar)

Preheat your oven to 200 degrees (180 degrees if you have a fan oven) and line a baking tray with baking paper.

Melt the butter over low heat. Brush each phyllo sheet lightly with the melted butter. Spoon 1 tablespoon goat cheese and 0.5 teaspoon honey on the underside of each filo pastry sheet. Fold 1 corner at the bottom of the dough diagonally over the filling, so that a triangle is created at the bottom. Now fold the triangle (obliquely) upwards until you have a triangular package. See   a handy instruction drawing here .

Brush the triangles lightly on top with some melted butter, place on the baking tray and bake for about 15 minutes until golden brown.

Meanwhile make the salad. Wash the lettuce and tomatoes. Mix in the avocado and spoon over the dressing. Let the triangles cool for a few minutes and place them on top of the salad.
