Salad with fried halloumi and dried tomatoes

On the blog of Martine Hilverda we found this delicious summer dish with, among other things, fried halloumi. This pickled goat’s cheese is typically Cyprotic and is perfect for baking due to its firm nature. Because the cheese has a relatively high protein content, it does not melt during baking, but a delicious crispy crust is created. 

  • 1/2 package halloumi, rinsed and sliced
  • 4 handfuls of mixed lettuce
  • 2 tablespoons lemon juice
  • Olive oil for frying
  • Sun dried tomatoes

Start making the sun-dried tomatoes well in advance according to this recipe  and let them cool well. Fry the halloumi in a frying pan with a dash of olive oil over high heat until golden brown on both sides. Let the cheese cool and cut into cubes

Put the lettuce in a large bowl and add a few dried tomatoes and halloumi cubes. Drizzle with lemon juice and additional olive oil if desired. Season with salt and pepper.
