Appetizer for 4 persons:

  • 100 grams of peeled Wadden Sea shrimps
  • 30 grams smoked beef (thinly sliced)
  • Half cucumber
  • 1 tablespoon mayonnaise
  • 1 tablespoon crème frache
  • Bunch of curly parsley
  • 100 ml olive oil
  • 100 ml sushi vinegar
  • 1 tablespoon mirin
  • Pepper and salt
  • cling film

Check the shrimp for skins. Peel the cucumber and cut into brunoise (small cubes of 2 by 2 by 2 mm). Place the cucumber in some sushi vinegar with mirin. Mix the mayonnaise with the crème frache until smooth.

Process the parsley with the olive oil in a food processor until smooth. Mix two-thirds of the cucumber with the shrimp and season with salt and pepper.

Place the smoked beef on cling film, place the shrimp on it and make a nice roll. Cut four nice portions of this. Dress as shown in the photo.
