For the hummus:

  • 250 grams chickpeas
  • half lemon
  • Handful of coriander
  • Salt pepper
  • Pinch of garlic powder
  • Pinch of paprika powder
  • 1 tablespoon tahini (sesame paste)

For the rice:

  • 500 grams of parsnip
  • Handful of raisins

Peel the parsnip and cut into small pieces. Place the pieces in a food processor and blend until it has a somewhat coarse texture and resembles cooked rice. Place on a plate and set aside.

Drain the chickpeas and rinse under water. Put them in a food processor together with the juice of half a lemon, the tahini, coriander, garlic powder, paprika powder and pepper and salt to taste. You may want to add some raisins for a sweeter taste, but this is entirely up to you!

Then blend it into a smooth mixture and then it is ready to be served. Spoon the parsnip rice and mix in some raisins. Serve the hummus as a side dish or as a sauce over the rice.
