For 4 small or 2 large salads:

  • 150 grams quinoa
  • 300ml water
  • Little oil for frying
  • Seeds of half a pomegranate
  • 5 spring onions, white part finely chopped lengthwise
  • 1/2 fennel, sliced ​​as thinly as possible or grated on the mandolin
  • 1 handful of parsley, finely chopped
  • Fresh raspberries for decoration
  • Pepper and sea salt, to taste

Rinse the quinoa in a sieve with plenty of water. Bring the water with the quinoa to the boil and let the quinoa simmer gently for 15 minutes with the lid on the pan.

Heat some oil in a frying pan and fry the spring onion for 1 to 2 minutes. Remove from the pan and set aside.

Place the quinoa in a large bowl and toss briefly. Add spring onion, parsley, fennel and pomegranate seeds. Toss everything together carefully. Add pepper and sea salt to your own taste.
