How to make the tahini (sesame paste)

Preheat your oven to 175 degrees and spread the sesame seeds on a baking tray lined with baking paper. After a few minutes, shake the seeds and roast them until golden brown and fragrant. Let the seeds cool slightly.

Place the sesame in a small food processor or blender along with a dash of olive oil and puree. Regularly scrape the edges down with a spatula and add extra oil until you reach the desired consistency.

Season the tahini with a little sea salt and possibly a squeeze of lemon juice. Store the tahini in a sterilized jar and refrigerate for up to a month.
