With this fresh salad with mackerel and couscous you can bring summer into your home in one fell swoop. Delicious for lunch or as a light dinner. 

For 2 people for lunch:

  • 1/2 smoked mackerel
  • 1 shallot
  • 4 tablespoons parsley
  • 1/2 lemon
  • 75 grams arugula
  • 75 grams couscous
  • 1 chicken stock cube
  • Red wine vinegar
  • Olive oil, pepper and salt

Tip: can you get pearl couscous? Then use this instead of the regular variant. It makes a world of difference and makes your salad even tastier. 

Clean the mackerel and remove any bones. Sprinkle with a little salt, pepper and lemon juice and let it rest at room temperature for five minutes. Chop the shallot and finely chop the parsley. Mix with the mackerel and season with a little vinegar and olive oil. Taste and add additional seasonings if necessary.

Make the couscous according to the package with the stock cube, and let it cool. Drizzle the arugula with a little olive oil and ‘toss’ with your fingers. Cut the orange into wedges.
