For the soup:
- 4 heads of lettuce
- 2 liters of vegetable stock
- 2 large onions (1 large, 2 small in this case)
- 4 cloves of garlic
- 250 ml fresh whipped cream
For the basil oil:
- A few sprigs of fresh basil
- Extra virgin olive oil
Make two liters of vegetable stock , finely chop the garlic and cut the onion into pieces. Remove the hard core from the heads of lettuce and cut into coarse pieces. Rinse thoroughly under the tap and use a salad spinner or colander to dry the lettuce.
Saute the garlic and onion for a few minutes in a large soup pot with a little olive oil. Raise the heat to high, add the lettuce in several batches and keep stirring. Add the lettuce and when it has wilted, add the stock.
Reduce the heat to low and use an immersion blender to smooth the soup. Then add the whipped cream and stir gently. Season with salt and pepper.
While the lettuce is cooking, make the oil by chopping the basil leaves. Heat the olive oil very gently and add the basil. Prevent the basil from coloring or really baking, we only want to give off the taste.
Serve the soup with a few drops of basil oil.
