In our opinion, chicken nuggets are the ultimate snack while watching television or just during the week for dinner, together with a salad. This normally not so healthy snack can be made responsible in a simple way: by making healthy chicken nuggets yourself! For 2 people:
- 1 large chicken breast
- 6 tablespoons breadcrumbs
- 6 tablespoons shredded coconut (or 6 additional tablespoons breadcrumbs)
- 1 egg white, beaten
- Pepper, salt and chili flakes
- Olive oil
Preheat the oven to 175 degrees. Make two bowls: one with the egg white and one with the breadcrumbs (and optionally the coconut) mixed together. Cut the chicken breast into elongated cubes and season with pepper, salt and chili flakes. Then dip each piece of chicken breast in the egg white and then in the mixture.
Place the pieces on a baking tray lined with baking paper and drizzle a little olive oil over them. Place the chicken nuggets in the oven and bake for 30 minutes until golden brown. Note: turn the nuggets after 15 minutes!
