How to make your own lahmacun (Turkish pizza)

This delicious recipe for lahmacun (Turkish pizza) is taken from The Mighty Spice Express cookbook by John Gregory-Smith. So easy to make yourself, and incredibly delicious!

For 2 people:

  • 1½ tbsp olive oil
  • Half a tomato
  • A pinch of finely ground chili flakes
  • 200 grams of minced lamb
  • 1 tablespoon of sun-dried tomato tapenade
  • Sea salt
  • 2 cloves of garlic
  • ½ teaspoon mild paprika powder
  • 2 flour tortillas
  • ½ teaspoon cumin powder
  • 1 small handful of mint leaves
  • ¼ teaspoon cinnamon
  • 1 small handful of parsley leaves
  • Lemon

Preheat the grill to the highest setting. Meanwhile, heat 1 tablespoon  of oil in a large skillet over high heat. Add the minced meat and stir well.

Peel the garlic and squeeze it over the meat. Add the paprika, cumin, cinnamon and salt to taste. Squeeze half a lemon over the top and stir-fry for 3-4 minutes, until the mincemeat is cooked through and golden brown. Remove the pan from the heat and set aside.

Remove the seeds from the tomato half and finely chop the flesh. Add the tomato to the minced meat and the tapenade of sun-dried tomatoes. Mix well.

Place the tortillas on a grill rack and brush with the rest of the oil. Divide the seasoned minced lamb over the tortillas and then place under the grill for 1-2 minutes, until the edges curl.

Meanwhile, finely chop the herbs and cut the remaining half lemon into quarters. Before serving, sprinkle some herbs and chilli flakes over the lahmacun and serve with the lemon wedges.
