Delicious spicy red lentil soup

For 1.5 liters of soup:

  • 2 tablespoons olive oil or butter
  • 1 large onion, finely chopped
  • 1 large garlic clove, crushed
  • 250 grams dry red lentils, rinsed
  • 2 carrots, thinly sliced
  • 1 teaspoon paprika powder
  • 1 bay leaf
  • 1.5 liters chicken or beef stock
  • Juice of half a lemon
  • Parsley, finely chopped, for garnish
  • Salt and pepper

Heat the oil or butter in a stockpot and sauté the onion  and garlic over a medium heat for 2 minutes.
Add the rest of the ingredients, except the parsley, and bring the soup to a boil. Reduce the heat, cover the pan and simmer for 40 to 60 minutes until the lentils are soft and pulpy. The cooking time varies, so check after 40 minutes if the lentils are already soft.

Sprinkle with the parsley and sprinkle with some lemon juice for a fresh element. Serve the soup hot and garnish with a spoonful of crème frache and some crispy fried onion if desired.
