This recipe for a crostini with peas, feta & mint hummus from Cuisine de Clementine is really super easy, and so damn good!
- 150 grams of green peas
- 100 grams feta, crumbled
- Bunch of mint
- Splash of olive oil
- Pinch of salt
- Juice of half a lemon
- A few slices of hearty bread
Preheat your oven to broil and drizzle some olive oil over both sides of the bread. Place the slices under the grill while making the hummus. Flip the bread when the top is crispy, keeping a close eye on it.
Blanch the green peas by immersing them in boiling water for about one minute. Then put the remaining ingredients (except the lemon juice) in a blender or food processor and mix until smooth. It does not have to be completely even, there may still be some green peas or pieces of feta visible.
Taste the hummus and add a little more lemon juice if desired. Spread the hummus on the crusty bread or use it as a dip.
