Pascale Naessens is the best-selling culinary writer in Flanders and for good reason: her books revolve around healthy food, with delicious recipes that are easy to prepare.
For 2 people:
- 2 large slices of goat cheese
- 3 pears
- curly lettuce
- 2 sprigs of fresh rosemary
- 1 handful of walnuts
- 3 tablespoons honey
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- juice of 1/2 lime
Eating good food combinations and healthy fats, that is Pascale’s cooking philosophy. It is not a diet, but a way of eating that benefits your health. Her latest book is called Pure enjoyment 2 and is highly recommended. Today a recipe from this book on Culy: baked pear with goat cheese, honey & walnuts.
Cut the pears into quarters and remove the core, but do not peel. Fry them over a low heat in olive oil for about 10 minutes until cooked through. Strip the leaves from the rosemary sprigs and fry them. For the dressing, mix the honey with the olive oil, balsamic vinegar and lime juice. Season with black pepper.
Wash the lettuce. Place the curly lettuce at the bottom of a plate, place the baked pears in a star and in the middle the goat cheese with the dressing on top. Garnish with the nuts, some black pepper and, if desired, some extra olive oil.
Tip: If you use dry goat cheese, you can fry it very briefly on both sides, so you get a delicious crust. This does not work with fresh goat cheese, because you cannot bake it.
