This is how you make the summer pea soup

Bring the water to the boil with the coconut milk, salt and ground cumin.

Add the peas and bring to a boil again. Simmer for 10 minutes.

Remove the pan from the heat and puree the soup with the immersion blender.

Garnish with the toasted coconut chips and season with the fresh pepper and coriander.

Do you not use roasted coconut chips but grated coconut? Then roast the grated coconut in a frying pan over medium heat (without oil) until it gets a brown tinge. This will take 2-3 minutes, so stick to the pan and stir frequently. Remove the pan from the heat immediately as soon as the coconut turns brown.
