Just a little story: in 1943 the Mexican cook Ignaicio Anaya, ‘nacho’ for the friends, lived in Piedras Negras (Mexico, just across the American border). At that time, this region was regularly visited by women, husbands of American soldiers. During one of their trips, the group of ladies decided to have dinner at Ignacio, so ‘Nacho’, who actually wanted to close, but did not want to miss this opportunity for extra turnover.
He invented a new snack with what he had in the kitchen. He cut tortillas into triangles and baked them in the oven with shredded cheddar and jalapeño peppers. The ladies loved it and when asked what this dish was called, the cook proudly replied: ‘Nachos especiales’.
This is how you make nachos a complete meal
You read that the dish did not have a strict recipe from the very beginning. Remember that you can safely lift nachos with (a lot of) tasty toppings, then it will always work out.
1. Make loaded nachos with vegetables
By adding a lot of veggies to the nachos, they become a lot healthier and more nutritious. Vegetables that go well with nachos are red bell pepper, red onion and tomato. You can hide these between the nachos before they go into the oven. After baking, you can spoon a quick tomato salsa on top of the nachos.
2. Add refried beans
Refried beans are black beans that are baked with delicious seasonings, then mashed and then baked again. You can buy these ready-made in the supermarket (for example from the brand La Morena), but you can also make them yourself. That’s even more delicious and they are the perfect way to give your nachos some more body .
3. Make quick lunch nachos…
Nachos for lunch? It’s not such a crazy idea at all. Just look at Bon Appetit chef Chris, who puts a quick nacho dish with cauliflower, refried beans and a lot of tasty toppings on the table in no time. When the nachos are in the oven, you’ll have time to finely chop avocado, red onion, and fresh herbs. You simply sprinkle it on top when the nachos come out of the oven.
4. …or nachos for breakfast
Nachos for breakfast , have we gone crazy? Not at all. Admittedly, it may be a bit decadent, but it actually makes sense. Nachos are super delicious in combination with bacon and an egg, the ultimate breakfast dish. For example, bake the nachos in the oven with cheese and diced tomatoes, and in the meantime bake diced bacon and an egg (in your favorite way). Put the two together and you have a top breakfast.
5. Put them in a bowl
If you don’t want nachos to be the main ingredient of your meal, you can also use them as a topping on a bowl. For example, we once made a Mexican rice bowl with chicken and lime aioli . The nachos provided the necessary crunch. This burrito bowl in one large pan also undoubtedly goes well with nachos.
