Thinking about what to eat every day and that for lunch too: we sometimes find it quite a task. So we’re very grateful to have discovered a new favorite: this easy noodle salad with miso cauliflower. Both hot and cold addictively delicious.

3. Roasted Garlic Soup with Green Herb Oil
Is there anything better than roasted garlic? We dare to doubt it. And in this garlic soup, this flavor bomb is also central. So make it! For the vegan version, use oat cream and vegetable stock.

4. Homemade peanut milk
There is only one question that we asked ourselves after we made this recipe. Why didn’t we know peanut milk before? Because although the range of plant-based milk substitutes is only increasing, you will not come across peanut milk that easily. So wrong.

5. Salad of bimi (asparagus broccoli) with sesame miso sauce
A salad that consists of only one vegetable, is that a salad? Yes, and that can be very tasty too. Just look at this bimi salad with a killer miso sauce. You really don’t need more for a light dinner or quick lunch.

Our mouths were watering when we thought of these delicious vegan ramen with miso, pumpkin and tofu. And guess what? It’s even tastier than we suspected. A full flavor bomb that will please any ramen lover. And: it’s healthy too.

6. Risotto with beer, mushrooms & peanut crumbs

This recipe is for the meat eaters who occasionally want to cut back on meat, but who don’t want to compromise on taste. Because the Beyond Burger comes so admirably close to an ordinary hamburger in taste and texture, it seems like magic. We made a horribly tasty vegan burger with it.

8. Cauliflower steak with romesco sauce and hazelnuts
A super tasty vegan meal for weekdays: cauliflower steak with romesco sauce and hazelnuts. Gently roasted cauliflower with a delicious paprika sauce from which the sun will shine spontaneously. The hazelnuts top it off.

9. Tostadas with avocado and sweet potato
You could think of tostadas as the Mexican version of a sandwich: you don’t roll them up like a wrap, but just eat them like that. There is no other option, because for a tostada the tortilla is first baked crispy and then decorated with all kinds of delicious toppings. fiesta!
