Avery tasty and cleverly conceived recipe from Culy reader Eva for healthy pancakes!

  • 250 grams spelled flour
  • 1.75 dl soy milk
  • 1 egg
  • Pinch of salt
  • 1/2 tablespoon chia seeds (soak in water first)
  • 1 tablespoon hemp seed
  • 1/2 tablespoon crushed linseed

Topping:

  • coconut shavings
  • Maple syrup

“This morning I woke up and man oh man did I feel like pancakes. Since I’m a bit busy with sports and good nutrition again, I initially thought: NO CAN DO! The water that ran in my mouth at the thought of pancakes won and I opened all the cupboards in the house, looking for a healthy alternative to grandmother’s recipe. I did it!”

Mix all of the above except the milk. Add the milk and mix until you have the desired consistency. You may need a little more, but if you like thicker pancakes, there’s a good chance you’ll have leftovers.

Let the batter rest for 10 minutes in the fridge and then you can bake the pancakes with a little bit of coconut fat in the pan.

A pancake without a sweet topping is not a pancake for me, but to keep it healthy I top it all off with a dash of maple syrup and coconut shavings.
