This recipe comes from Irene van Gent, the vegetarian cook at Puur Tafelen .
For 12 pieces:
- 50 grams of sugar
- 4 tablespoons liquid honey
- 100 grams sesame
- 40 grams of sunflower seeds
- 25 grams muesli mix
Lightly toast the nuts and seeds in a non-stick pan. Put the sugar in a pan and let it melt. Melting sugar is always a little exciting, because it shouldn’t get too dark.
It does take a while to get the hang of the art of this. Key Tips: Be patient, move the pan, but don’t stir the pan because the sugar is so hot and sticks to the spoon.
When the sugar has completely melted, add the honey. Mix together and immediately add the seeds and muesli and mix until everything is well mixed and there is almost no movement in the mixture.
Then spread the entire mixture on a piece of baking paper and form a slice that is about 5 mm thick and has a square shape. Let it rest for a while and cut it into pieces. Do not wait too long, then it will be too hard to cut.
Tip: Replace the sesame completely with muesli!
