Elles Beijers, our favorite happy & healthy lifestyle blogger from Self Help Editor (definitely worth it!) , has a good tip for a filling, nutritious and responsible (and delicious) breakfast with quinoa.
For 1 person:
- 1 cup quinoa
- 1 banana
- A few spoons of Greek yogurt (0% fat) or milk
- Fruit of your choice (e.g. blueberries and mango)
Wash a cup of quinoa under the tap.
Put it in a pan with some water. About 100 ml of water per 100 grams of quinoa (the quinoa should be just submerged).
Bring to a boil, then simmer over low heat until water has evaporated (takes about five minutes). Stir regularly.
Turn off the heat, cut a banana into slices and add that to the quinoa. Let it rest for a few minutes with the lid on the pan.
Put the yogurt or milk in a bowl, drape the quinoa/banana mixture over it, finish with the fruits.
