  • 1 tablespoon brown sugar

Preheat your oven to 30 degrees (yes, 30 degrees!). Heat the milk with the butter in a small saucepan. Make sure the butter melts, but don’t let the milk boil. Let cool to body temperature. Place both types of flour, sugar, salt and spices in a mixing bowl.

In a small bowl, mix the fresh yeast together with one teaspoon of sugar. Stir this until it becomes liquid. Pour into the dry ingredients, along with the egg and milk mixture. Mix with dough hooks until a ball forms. Grease a mold with some oil that can go in the oven and place the dough in it. Cover with cling film and place in the preheated oven for half an hour. The oven may now be turned off.

While the dough is rising in the oven, prepare the butter mixture for between the ‘buns’. To do this, soften the butter (in the microwave or with our handy tip ), but prevent it from melting. Add the sugar, cinnamon and salt and stir until everything is well mixed. Meanwhile, grease a baking pan with a diameter of about 24 centimeters with butter.

Sprinkle some flour on your counter or table and roll out the dough into a square of about 35 x 25 centimeters. Spread the butter mixture over this. Cut into seven pieces, roll them up and place them upright in the baking tin, just not touching each other. Cover with a damp tea towel and let rise overnight in a cold place such as a cellar or refrigerator.

The next morning, preheat the oven to 30 degrees and let the rolls rise for another half hour. Remove from oven and increase temperature to 200 degrees. Brush the rolls with a beaten egg and sprinkle with a tablespoon of brown sugar. Bake in the oven for about 20-25 minutes and then let it cool on a wire rack.
