After frying eggs in a bell pepper and an avocado , there is something new: a sunny side up egg  in an onion ring.

Cut an onion into rings about 1 cm thick. Place the largest ring in an oil ‘greased’ frying pan and place over medium heat. When one side is lightly browned, flip the ring and crack an egg in the center. Add a little water to the pan (excluding the onion ring!) and put the lid on. Bake until your egg is cooked (or however you want it).

Now just sprinkle with sea salt and pepper and enjoy!
