Are you a bit tired of the standard oatmeal porridge? Then we have a delicious recipe for you: super fast tropical oatmeal with mango & coconut.

For 1 person:

  • 1 cup milk (we used coconut rice milk)
  • Half cup of oatmeal
  • Handful of pieces of ripe mango
  • 1 tablespoon coconut grater
  • Little agave syrup
* As a basis we used rice milk with coconut (provamel brand, available at health food stores). But you can of course also use almond milk, oat milk, cow’s milk, etc. The rice milk with coconut gives an extra tropical touch.

Heat 1 cup of milk with half a cup of oatmeal (regular cheap  rolled oats from the supermarket or health food store) in a saucepan and bring to a boil. Let it cook for a few minutes until the milk has been absorbed by the oatmeal and a firm mass is formed. Let cool a little bit.

Serve with chunks of super ripe mango, some grated coconut and a little agave syrup if you like it sweet. Enjoy!
