Toast with poached eggs, grilled tomatoes and avocado

  • 2 large eggs
  • 1 ripe avocado*
  • Bunch of cherry tomatoes
  • Splash of olive oil
  • Crispy (sourdough) bread
  • Sea salt and pepper to taste

Preheat the grill in your oven and place the cherry tomatoes in a baking dish. Drizzle with a drizzle of olive oil and sea salt. Place them under the grill for about five minutes, until they are completely soft inside. Halve the avocado, scoop out the flesh and mash roughly with a fork. Season with a little sea salt.

Bring a large pan with plenty of water to the boil and poach the eggs. Watch the video below to see how you can do that very easily.

Cut a piece of the bread and cover it with a thick layer of avocado, a poached egg and a few cherry tomatoes. Enjoy your dinner!
