For 1 person:

  • 50 grams amaranth
  • 150 grams blueberries
  • 125 ml almond milk
  • 1 tablespoon maple syrup or agave syrup
  • 1 teaspoon cinnamon
  • Handful of almonds
  • Couple of spoons of cottage cheese for it

Let the amaranth soak overnight. This is not necessary, so if you don’t have time or if you spontaneously feel like this breakfast, you can also make it unsoaked.

Place the amaranth in a fine sieve and rinse under water. Put the amaranth in a pan with plenty of water and a pinch of salt. Bring to the boil and let it simmer for ten minutes on low heat with the lid on the pan. Drain the amaranth, add cinnamon and let stand for ten minutes.

Meanwhile, bring the blueberries, syrup and milk to the boil in a saucepan. Reduce the heat and let it simmer for ten minutes. Stir occasionally.

Grab a bowl. Pour the berry mixture into a bowl, add some cottage cheese and then the amaranth. Sprinkle over some extra berries, nuts you like, syrup and cinnamon.
