Super easy and healthy: chia pudding with pomegranate seeds

Making your own pudding is a lot of work? Does not have to! This superfood chia seed pudding  is super quick to make and very nutritious. Soaking the chia seeds in moisture creates a thick, creamy pudding with a neutral taste that is perfect for adding all kinds of tasty things. 

For 1 large bowl of pudding:

  • 2 tablespoons chia seeds
  • 150 ml rice milk or other milk
  • 1 tablespoon honey, rice syrup or maple syrup
  • Pinch of salt
  • pomegranate seeds

Mix the chia seeds with the rice milk, sweetener and optionally a pinch of salt, pour into a bowl and cover. Let stand for at least 1 to 2 hours so that the chia seeds absorb the moisture and start to swell. This will make it into a pudding.

Stir with a fork and serve me pomegranate seeds. Other tasty toppings: chopped nuts, banana slices, cinnamon, grated coconut and/or honey. Eat as a nutritious breakfast or dessert. Yum !

Tip: the more chia seeds you add, the thicker the pudding will be.
