For 2 people:

  • Butter for greasing
  • 4 tablespoons soft herb cheese
  • 1 handful of smoked salmon chips
  • 4 eggs
  • finely chopped dill
  • salt and pepper

Grease two small baking dishes, ramekins or mini pans with a little butter or oil. Put the herb cheese in the bottom, then the salmon flakes on top. Season with salt and pepper. Break two eggs over each bowl and sprinkle with a little salt and pepper again.

Garnish with some dill and place the ramekins in a larger baking dish. Put a layer of boiling water in the baking dish (about half of the trays) and put in the oven.

Check the eggs after about 8 minutes, sometimes they go faster than other times. When the eggs have set sufficiently, take the dish out of the oven. Carefully remove the bowls from the bowl of water and place them on a cloth. Serve with toasted bread.
