Oatmeal has long been our favorite start to the day. Deliciously warm, topped with fresh fruit and it fills you up for the rest of the day. On a cold Saturday morning we made this variant: with cinnamon, caramelized banana and pear. Recommended! 

For 1 person:

  • 60 grams of oatmeal
  • 250 ml semi-skimmed milk
  • pinch of cinnamon
  • 1/2 ripe banana
  • 1/2 ripe pear ( Doyenné du Comice ), peeled and cored
  • 1 full tablespoon of dark brown sugar
  • Fresh lemon juice
  • lump of butter

Place the oatmeal with the milk in a saucepan and place over low heat. Stir together with a pinch of cinnamon. Meanwhile, slice the banana and pear.

Heat a knob of butter in a frying pan ( coconut oil is also possible, but is less tasty) and add the slices of fruit. Raise the heat to medium-high and prevent the fruit from sticking. Sprinkle with a very small amount of lemon juice. Meanwhile, occasionally stir the oats with a silicone spatula.

After a few minutes, turn the fruit slices with a fork and sprinkle with the sugar, this will slowly caramelize. When the oatmeal is the right thickness, pour it into a bowl and serve with the warm fruit.
